How to Brew at the Right Temperature
From roasted teas, to classic steamed greens, to more delicate varieties—water temperature is a key component to bringing out the best flavor experience. Learn how to brew your most loved types of tea.
Directions
Roasted (Hojicha), classic (Sencha) and premium (Gyokuro) green teas are all brewed at different water temperatures to ensure optimal taste.
Hojicha
Hojicha (roasted) green tea is brewed at high temperature (200° F). Hojicha leaves expand, so brew in a large teapot.

Add 4 teaspoons of tea into the teapot

Pour boiled water directly into the teapot.

Brew for 30 seconds.

Sencha
Sencha (classic) green tea is brewed at medium temperature (180° F). Use a standard sized kyusu, or similarly sized teapot.

Pour boiled water into the teacup first, which cools the water temperature by about 18 degrees.

Add 2 teaspoons of tea into the teapot.

Pour the water from the teacup into the teapot.

Brew for 30 seconds.

Gyokuro
Gyokuro (premium) green tea is brewed at a low temperature (140° F). Use a small kyusu, or similarly sized teapot.

Pour boiled water into the teacup first.

Add 2 teaspoons of tea into the teapot.

Wait for 30 seconds for the water to cool further.

Pour the water from the teacup into the teapot.

Brew for 2 minutes.
